So this morning I really wanted a quiche. The thing is quiche takes time – not in preparation but in cooking and Lexi has about 25 minutes from the moment she wakes up until the moment she must have food in her belly so I thought: I CAN DO THIS!
Ingredients:
1/2 a bag of frozen broccoli florets
1/4 cup of shredded cheese
10 eggs
Cooking Spray
Salt to season
Action:
1. Spray the cupcake pan with cooking spray and preheat your oven to 375 degrees
2. Place a few broccoli florets in each Cupcake
3. Sprinkle the cheese in each cupcake.
4. Put the ten eggs in a big enough bowl that you can wisk, mine has a pour spout that is very helpful and season will salt if you so choose. Salt can make your eggs a little firmer – in this implementation I think that’s a good thing.
5. Beat the eggs and then pour the eggs into your cupcake pan filling about 2/3 of the way full.
6. Bake at 375 degrees for 20 minutes.
They are very yummy, super portable and you can freeze them. As Val and I were talking about it this morning she mentioned taking one and cutting it in half and wrapping it up to make a breakfast burrito. You could do whatever vegetable/cheese combinations you want.

Second. Zucchini Bread. It’s a bread, it’s sweet, it’s desert or breakfast or lunch or a snack or a meal or a day and it’s a VEGETABLE. It totally counts as a vegetable even when it is baked in bread. So here’s my recipe – If you click on the image it will zoom up bigger and then you can print it.
I’m testing out different ways to post recipes that I love that make it as easy as possible for you to enjoy – does this work for you? Suggestions?
Here's my thing. (Ok, it's just one of my things, but whatever.) I cannot eat zucchini bread as a dessert. This rule also applies to carrot cake. Don't get me wrong. It's yummy. And I do loves my veggies. I can eat it as a snack or for breakfast. But my dessert? No veggies allowed. Not even if you toss in a handful of chocolate chips or add some icing. ;-)

I was given a massive Zucchini this weekend and thought...whalah....I know what to do with this thing thanks to Cass :-)
YIKES!!! I am in the midst of making this and noticed I have no idea what degrees to put the oven on!!!! Crap I hope I don't burn the yummy smelling bread!
