Second. Zucchini Bread. It’s a bread, it’s sweet, it’s desert or breakfast or lunch or a snack or a meal or a day and it’s a VEGETABLE. It totally counts as a vegetable even when it is baked in bread. So here’s my recipe – If you click on the image it will zoom up bigger and then you can print it.

Here's my thing. (Ok, it's just one of my things, but whatever.) I cannot eat zucchini bread as a dessert. This rule also applies to carrot cake. Don't get me wrong. It's yummy. And I do loves my veggies. I can eat it as a snack or for breakfast. But my dessert? No veggies allowed. Not even if you toss in a handful of chocolate chips or add some icing. ;-)

YIKES!!! I am in the midst of making this and noticed I have no idea what degrees to put the oven on!!!! Crap I hope I don't burn the yummy smelling bread!
